Ingredients

  • 3 bags green tea bags
  • 2 cups water
  • 250 grams soba noodles
  • 2 tablespoons sesame oil
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon fresh ginger
  • 1 clove garlic clove
  • 2 stalks green onions
  • 1 tablespoon sesame seeds
  • 1 teaspoon red pepper flakes
  • 1 medium cucumber

Directions

Step 1

Boil 2 cups of water and steep the green tea bags in the boiled water for 5 minutes. Remove the tea bags and allow the tea to cool slightly.

Step 2

In a large pot, bring the green tea infusion to a boil and add a pinch of salt.

Cook the soba noodles in the green tea water according to the package instructions, usually about 5-7 minutes. Stir occasionally to prevent them from sticking.

Once cooked, drain the soba noodles and rinse under cold water to stop the cooking process. Set aside.
