  • 2 cups Rolled oats
  • 0.5 cup Almonds, chopped

  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt
  • 0.5 cup Almond butter
  • 1 teaspoon Vanilla extract
  • 1 cup Pitted dates
  • 0.5 cup Warm water

Directions

Step 1

Start by soaking the pitted dates in warm water for about 10 minutes to soften them.

Step 2

In the meantime, in a large mixing bowl, combine the rolled oats, chopped almonds, shredded coconut, flaxseed meal, chia seeds, ground cinnamon, and salt. Stir well to mix.

Step 3

Drain the dates and place them in a food processor. Add the almond butter and vanilla extract. Process until smooth and creamy, stopping to scrape down the sides as needed.

Pour the date mixture into the dry ingredients in the mixing bowl. Stir until fully combined and the ingredients are evenly distributed.
