Ingredients

  • 1 cup Raw almonds
  • 1 cup Raw walnuts
  • 1 cup Raw pecans
  • 0.5 cup Pumpkin seeds
  • 0.5 cup Sunflower seeds
  • 0.5 cup Unsweetened shredded coconut
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt
  • 0.25 cup Coconut oil
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 325°F (163°C) and line a large baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the almonds, walnuts, and pecans.

Step 3

Roughly chop the nuts with a sharp knife or pulse them in a food processor until they are in bite-sized pieces.

Step 4

Add the pumpkin seeds, sunflower seeds, and shredded coconut to the chopped nuts. Stir well to combine.

Step 5

Sprinkle the cinnamon and salt over the nut and seed mixture and toss to combine.

Step 6

In a small saucepan over low heat, melt the coconut oil. Remove from heat and stir in the vanilla extract.

Pour the coconut oil mixture over the nut and seed mixture and stir until everything is evenly coated.
