Ingredients

  • 1 cup Semolina (Suji)
  • 2 tablespoons All-purpose flour
  • 2 tablespoons Oil
  • 0.25 cup Water
  • 0.5 teaspoon Salt
  • 1 cup Mint leaves
  • 0.5 cup Coriander leaves
  • 2 medium Green chilies
  • 2 tablespoons Tamarind pulp
  • 1 teaspoon Roasted cumin powder
  • 0.5 teaspoon Black salt
  • 1 teaspoon Chaat masala
  • 2 large Boiled potatoes
  • 0.5 cup Chickpeas (boiled)
  • 0 as needed Oil for frying

Directions

Step 1

To make the puris, combine semolina, all-purpose flour, and salt in a bowl.

Step 2

Add oil and mix well until the mixture resembles breadcrumbs.

Step 3

Gradually add water and knead to form a stiff dough. Cover with a damp cloth and let it rest for 15 minutes.

Step 4

Divide the dough into small portions and roll each into small equal-sized balls.

Step 5

Roll each ball into a thin circle using a rolling pin.

Step 6

Heat oil in a frying pan over medium heat.

Step 7

Deep fry the puris in hot oil until they puff up and turn golden brown. Drain on paper towels and set aside.

For the pani (spiced water), blend mint leaves, coriander leaves, green chilies, and tamarind pulp into a smooth paste with a little water.
