Ingredients

  • 4 medium golden potatoes
  • 2 eggs
  • 0.5 cup all-purpose flour
  • 2 tablespoons green onions
  • 2 tablespoons fresh parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup olive oil

Directions

Step 1

Peel the golden potatoes and grate them into a large bowl using a box grater. After grating, place the potatoes into a clean kitchen towel and squeeze out as much liquid as possible.

Step 2

In another bowl, lightly beat the eggs and then add them to the grated potatoes. Mix well to combine.

Step 3

Add the all-purpose flour, finely chopped green onions, chopped parsley, garlic powder, onion powder, salt, and black pepper to the potato mixture. Stir until the mixture is thoroughly combined.

Heat a non-stick skillet over medium heat and add half of the olive oil. Allow it to warm up but avoid making it smoke.

Scoop about 2 tablespoons of the potato mixture into the skillet for each fritter and flatten slightly with the back of a spoon to form a disc shape.
