Ingredients

  • 200 grams Hazelnuts
  • 50 grams Butter, unsalted
  • 80 grams Granulated erythritol
  • 50 ml Water
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt

Directions

Step 1

Preheat your oven to 170°C (340°F).

Step 2

Spread the hazelnuts in a single layer on a baking sheet. Roast them in the oven for about 10 minutes until they are lightly browned and fragrant. Shake the pan halfway through to ensure even roasting.

Step 3

Remove the hazelnuts from the oven and set them aside to cool. Once cool enough to handle, rub them in a clean kitchen towel to remove as much of the skins as possible.

Step 4

In a medium saucepan over medium heat, melt the unsalted butter.

Step 5

Add the granulated erythritol and water to the saucepan with the melted butter. Stir continuously until the erythritol is fully dissolved.

Step 6

Bring the mixture to a gentle simmer and continue to cook for 5-7 minutes until it thickens slightly.

Step 7

Remove the saucepan from the heat and stir in the vanilla extract and a pinch of salt.

Step 8

Add the cooled, skinned hazelnuts to the saucepan and toss them in the glaze until they are evenly coated.

Step 9

Line a baking sheet with parchment paper. Using a slotted spoon, transfer the glazed hazelnuts onto the prepared baking sheet, spreading them out in a single layer.

Step 10

Allow the glazed hazelnuts to cool completely, which will help the glaze set and harden.

Step 11

Once cooled, store the sugar-free glacé noisette in an airtight container at room temperature until ready to serve. Enjoy as a snack or a topping for desserts!
