Ingredients

  • 2 cups Almond flour
  • 2 teaspoons Ground ginger
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Ground cloves
  • 1 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 0.5 cup Unsalted butter, softened
  • 0.5 cup Erythritol sweetener
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Molasses

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a medium bowl, mix together almond flour, ground ginger, cinnamon, cloves, baking soda, and salt. Set aside.

Step 3

In a large bowl, cream the softened butter and erythritol until light and fluffy using an electric mixer.

Step 4

Add the egg, vanilla extract, and molasses to the butter mixture. Blend until well combined.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.

Step 6

Scoop tablespoon-sized amounts of cookie dough and roll them into balls. Place them on the prepared baking sheet, leaving about 2 inches between each cookie.

Step 7

Flatten each ball slightly with your palm or the bottom of a glass.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.

Step 9

Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
