Ingredients

  • 0.75 cups All-purpose flour
  • 0.75 cups Milk
  • 3 large Eggs
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 2 tablespoons Unsalted butter
  • 0.5 teaspoon Cinnamon
  • 1 tablespoon Stevia or monk fruit sweetener

Directions

Step 1

Preheat your oven to 425°F (220°C). Place a 9x13-inch baking dish inside the oven to warm up as the oven heats.

Step 2

In a blender, combine all-purpose flour, milk, large eggs, vanilla extract, salt, cinnamon, and stevia or monk fruit sweetener.

Step 3

Blend the mixture for about 20-30 seconds until completely smooth. You can also whisk it vigorously by hand for about 2 minutes if you don't have a blender.

Step 4

Carefully remove the heated baking dish from the oven. Add the unsalted butter to the dish and tilt it gently to distribute the melting butter evenly across the bottom and sides.

Step 5

Pour the blended batter into the prepared baking dish over the melted butter.

Step 6

Place the dish back in the oven and bake for 20 minutes or until the pancake is puffed and golden brown on the edges.

Step 7

Remove from the oven and let it sit for a few minutes before cutting.

Step 8

Serve warm with your choice of toppings such as fresh berries, a sprinkle of cinnamon, or a drizzle of sugar-free syrup.
