Ingredients

  • 10 pieces Garlic cloves
  • 2 medium Red onions
  • 2 tablespoons Olive oil
  • 10 leaves Curry leaves
  • 3 pieces Dried red chilies
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds
  • 1 tablespoon Tamarind paste
  • 1 teaspoon Salt
  • 0.25 cup Water

Directions

Step 1

Peel and roughly chop the garlic cloves.

Step 2

Peel and finely slice the red onions.

Step 3

Heat the olive oil in a pan over medium heat.

Step 4

Add mustard seeds to the oil. Once they start to pop, add cumin seeds, dried red chilies, and curry leaves, stirring gently.

Step 5

After a minute, add the sliced onions and sauté until they turn golden brown.

Step 6

Add the chopped garlic to the onions and sauté for another 3-4 minutes until the garlic is slightly golden.

Step 7

Add the tamarind paste, salt, and water to the pan. Stir all the ingredients well.

Reduce the heat to low and simmer the mixture for about 7-8 minutes, allowing all the flavors to meld together. Stir occasionally to prevent sticking.

Remove from heat and let the mixture cool.

Transfer the cooled mixture into a blender or food processor and blend until smooth or your desired texture is achieved.
