Ingredients

  • 250 grams Bee hoon (rice vermicelli noodles)
  • 2 tablespoons Vegetable oil
  • 3 cloves Garlic, minced
  • 1 medium Onion, thinly sliced
  • 1 medium Carrot, julienned
  • 100 grams Cabbage, thinly sliced
  • 2 stalks Spring onions, chopped
  • 3 tablespoons Soy sauce (low sodium)
  • 1 tablespoon Dark soy sauce
  • 0.5 teaspoon White pepper
  • 2 large Eggs, beaten
  • 1 Red chili, sliced
  • 200 grams Chicken breast or tofu, sliced
  • 0.25 teaspoon Salt

Directions

Step 1

Soak the bee hoon in warm water for about 10 minutes or until they are soft. Drain and set aside.

Step 2

Heat 1 tablespoon of oil in a large frying pan or wok over medium-high heat. Add the beaten eggs and scramble until just cooked. Remove from the pan and set aside.

Step 3

In the same pan, add the remaining tablespoon of oil. Add the minced garlic and sliced onions. Stir-fry until the onions are soft and translucent.

Step 4

Add the chicken breast or tofu slices to the pan. Stir-fry until cooked through, about 5-7 minutes.
