Ingredients

  • 4 medium Potatoes
  • 3 tablespoons Vegetable oil
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Mustard seeds
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Salt
  • 0.25 teaspoon Asafoetida (hing)
  • 10 leaves Curry leaves
  • 2 tablespoons Fresh coriander leaves
  • 2 small Green chilies

Directions

Step 1

Peel and cube the potatoes into 1-inch pieces. Rinse them in cold water to remove excess starch and then drain.

Step 2

Heat the vegetable oil in a large skillet over medium heat.

Step 3

Once the oil is hot, add the cumin seeds and mustard seeds. Sauté until they start to crackle.

Step 4

Add the asafoetida, curry leaves, and green chilies. Stir for about 30 seconds to release their flavors.

Step 5

Add the cubed potatoes to the skillet and sauté them gently for about 5 minutes.

Sprinkle turmeric powder, red chili powder, coriander powder, and salt over the potatoes. Stir to coat the potatoes evenly in the spices.
