Ingredients

  • 4 medium ripe tomatoes
  • 0.5 red onion
  • 0.5 cup fresh cilantro
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lime juice
  • 1 small jalapeño pepper
  • 2 cloves garlic
  • 0.5 teaspoon salt
  • 0.25 teaspoon freshly ground black pepper

Directions

Step 1

Start by washing the tomatoes and then pat them dry with a paper towel. Finely chop the tomatoes and place them in a medium-sized bowl.

Step 2

Peel and finely dice half of a red onion. Add the diced onion to the bowl with the tomatoes.

Step 3

Take the bunch of fresh cilantro, wash, and dry it. Chop the cilantro finely until you have about half a cup. Add this to the tomato and onion mixture.

Step 4

Cut the jalapeño pepper lengthwise, remove the seeds and membrane for a milder flavor, and finely chop it. Add the chopped jalapeño to the bowl.

Step 5

Peel the garlic cloves. Mince them finely or use a garlic press, then add the garlic to the tomato mixture.

Step 6

Squeeze the juice of about one lime to get approximately 2 tablespoons of fresh lime juice. Pour the lime juice over the mixture in the bowl.

Step 7

Drizzle the extra virgin olive oil into the bowl, combining it with the other ingredients.

Step 8

Sprinkle in the salt and freshly ground black pepper, adjusting the seasoning as needed according to taste.

Step 9

Gently stir all the ingredients together until well combined. Ensure all elements are evenly distributed for a consistent flavor in every bite.

Step 10

Cover the bowl with plastic wrap or a lid and let the dip sit for at least 15 minutes at room temperature to allow the flavors to meld together.

Step 11

Serve the sugar-free fresh tomato dip with your choice of tortilla chips, vegetable sticks, or use it as a topping for grilled meats or salads.
