Ingredients

  • 4 cups Mixed greens (spinach, arugula, and romaine)
  • 1 large Cucumber
  • 1 cup Cherry tomatoes
  • 1 large Bell pepper
  • 0.25 small Red onion
  • 4 medium Radishes
  • 1 large Avocado
  • 0.25 cup Fresh parsley
  • 2 tablespoons Lemon juice
  • 3 tablespoons Extra virgin olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Start by thoroughly washing all the vegetables under cold water and patting them dry with a clean towel.

Step 2

In a large salad bowl, combine the mixed greens.

Step 3

Peel the cucumber if desired, then slice it thinly. Add to the salad bowl.

Step 4

Halve the cherry tomatoes and add them to the bowl.

Deseed the bell pepper and slice it into thin strips, then add to the salad.
