Ingredients

  • 450 grams fresh asparagus
  • 250 grams cherry tomatoes
  • 0.5 whole red onion
  • 60 milliliters lemon juice
  • 60 milliliters extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper
  • 15 grams fresh parsley
  • 1 teaspoon lemon zest

Directions

Step 1

Begin by washing the asparagus. Trim the woody ends and cut the spears into bite-sized pieces, about 1 inch in length.

Step 2

Bring a pot of water to a boil. Add the asparagus pieces and blanch them for 2-3 minutes until they are bright green and slightly tender.

Step 3

Immediately drain the asparagus and transfer it to a bowl of ice water to stop the cooking process. After 2-3 minutes, drain and pat dry with a paper towel.
