Ingredients

  • 1 3-4 pounds Whole chicken
  • 1 tablespoon Sea salt
  • 1 teaspoon Black pepper
  • 3 tablespoons Olive oil
  • 4 cloves Garlic cloves, minced
  • 1 whole Lemon, juiced and zested
  • 2 tablespoons Fresh rosemary, chopped
  • 2 tablespoons Fresh thyme, chopped
  • 1 teaspoon Paprika
  • 1 teaspoon Onion powder
  • 1 teaspoon Ground coriander
  • 1 teaspoon Ground cumin
  • 1 cup White wine
  • 1 cup Chicken stock

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Rinse and pat dry the whole chicken. Place it in a roasting pan or ovenproof dish.

Step 3

In a small bowl, combine the sea salt, black pepper, olive oil, minced garlic, lemon juice, lemon zest, rosemary, thyme, paprika, onion powder, ground coriander, and ground cumin.

Step 4

Rub this mixture all over the chicken, ensuring it is evenly coated. You may also gently loosen the skin and rub some of the mixture underneath for more flavor.

Pour the white wine and chicken stock into the bottom of the roasting pan.

Cover the chicken loosely with foil and place it in the preheated oven.
