Ingredients

  • 2 cups Almond flour
  • 0.5 cup Unsalted butter
  • 1 whole Egg yolk
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 8 ounces Cream cheese
  • 3 tablespoons Honey
  • 1 teaspoon Lemon zest
  • 10 whole Fresh figs
  • 10 leaves Fresh mint leaves

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a medium-sized bowl, combine almond flour and salt.

Step 3

In a small saucepan over low heat, melt the unsalted butter. Let it cool for a few minutes.

Step 4

Once cooled, add the melted butter to the almond flour mixture along with the egg yolk and vanilla extract. Mix until a dough forms.

Step 5

Press the dough evenly into the bottom and sides of a 9-inch tart pan with a removable bottom.

Step 6

Prick the dough with a fork to prevent bubbles and bake in the preheated oven for about 12-15 minutes or until lightly golden. Let it cool completely.

Step 7

While the crust cools, prepare the filling by beating the cream cheese, honey, and lemon zest together in a bowl until smooth and fluffy.

Step 8

Spread the cream cheese mixture evenly into the cooled tart crust.

Step 9

Slice the figs into rounds or quarters, depending on your desire for presentation.

Step 10

Arrange the fig slices on top of the cream cheese layer, starting from the outside working towards the center, until the tart is fully covered.

Step 11

Garnish with fresh mint leaves for an added touch of freshness.

Step 12

Chill the tart in the refrigerator for at least an hour before serving to allow the flavors to meld and the filling to firm up.

Step 13

Slice and serve chilled, enjoying a delicious sugar-free treat.
