Ingredients

  • 400 g (canned, drained and rinsed) Chickpeas
  • 1 small, finely chopped Red onion
  • 2 Garlic cloves
  • 30 g Fresh parsley
  • 30 g Fresh cilantro
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 50 g Chickpea flour
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 2 tbsp Olive oil
  • 4 Whole wheat burger buns
  • 4 large Lettuce leaves
  • 1 large, sliced Tomato
  • 1 small, sliced Cucumber

Directions

Step 1

Prepare the chickpea mixture by placing the chickpeas, red onion, garlic, parsley, cilantro, cumin, coriander, salt, and black pepper into a food processor.

Step 2

Pulse the food processor until the mixture is coarsely combined but not pureed. You want to maintain some texture.

Step 3

Transfer the mixture to a bowl and stir in the chickpea flour until well combined. This will help bind the falafel mixture.

Step 4

Divide the mixture into 4 equal portions and shape them into patties using your hands.

Step 5

Heat 2 tablespoons of olive oil in a large non-stick skillet over medium heat.
