Ingredients

  • 6 pieces Large eggs
  • 12 slices Deli ham slices
  • 1 cup Shredded cheddar cheese
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Chopped parsley
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a medium bowl, crack the eggs, add salt and black pepper, and whisk until combined.

Step 3

In a non-stick skillet, heat olive oil over medium heat. Add the whisked eggs and scramble them gently until they are just set. Remove from heat.

Step 4

Lay out a slice of ham on a cutting board. Place about 2 tablespoons of scrambled eggs on one end of the ham slice.

Step 5

Sprinkle a little shredded cheddar cheese over the eggs, then carefully roll up the ham slice around the eggs and cheese into a tight roll.

Step 6

Repeat with the remaining ham slices and scrambled eggs until all are filled and rolled.

Step 7

Place the ham and egg rolls seam side down on a baking tray lined with parchment paper.

Step 8

Sprinkle the remaining shredded cheddar cheese and chopped parsley over the top of each roll.

Step 9

Bake in the preheated oven for 10 minutes, or until the cheese is melted and bubbly.
