Ingredients

  • 500 g beef stew meat
  • 50 g unsalted butter
  • 50 g flour
  • 500 ml beef stock
  • 3 pieces gelatin leaves
  • 2 egg yolks
  • 0.25 tsp freshly grated nutmeg
  • 1 tsp salt
  • 0.5 tsp ground black pepper
  • 150 g bread crumbs
  • 2 eggs
  • 100 g all-purpose flour
  • 1 l oil for frying

Directions

Step 1

In a large pot, add the beef stew meat and cover with water. Bring to a boil, then reduce heat and simmer for about 1.5 to 2 hours until the meat is tender. Once cooked, shred the meat using two forks and set aside.

Step 2

In a saucepan, melt the unsalted butter over medium heat. Add 50g of flour and stir continuously to form a roux. Cook for about 2 minutes but do not let it brown.

Step 3

Gradually whisk in the beef stock, ensuring there are no lumps, and cook until the mixture thickens to a sauce-like consistency.

Step 4

Add the shredded beef, gelatin leaves (softened in cold water and drained), egg yolks, nutmeg, salt, and ground black pepper into the sauce. Stir well to combine. Adjust seasoning if necessary.

Step 5

Pour the mixture into a shallow dish and refrigerate for at least 4 hours or until the mixture is firm enough to shape.

Once the mixture has set, shape it into small cylinders, about 3 cm in diameter and 8 cm long.

Prepare a breading station with three bowls: one with 100g of flour, the second with whisked eggs, and the third with bread crumbs.

In a deep fryer or deep saucepan, heat oil to 180°C (350°F). Fry kroketten in batches until golden brown and crispy, about 4-5 minutes.
