Ingredients

  • 250 g Whole wheat flour
  • 150 g Unsalted butter
  • 2 Eggs
  • 2 tbsp Water
  • 1 pinch Salt
  • 150 g Medjool dates, pitted
  • 1.5 kg Apples (preferably Granny Smith or another tart variety), peeled, cored, and sliced
  • 2 tbsp Lemon juice
  • 2 tsp Ground cinnamon
  • 1 tbsp Cornstarch
  • 75 g Raisins
  • 50 g Chopped nuts (optional)

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease a 24 cm (9-inch) springform pan with a bit of butter.

Step 2

In a large mixing bowl, combine the flour and a pinch of salt. Add cubed unsalted butter and rub with your fingertips until the mixture resembles breadcrumbs.

Step 3

Beat one egg and add it to the flour-butter mixture along with 2 tablespoons of cold water. Mix until the dough forms a ball. Wrap in plastic wrap and refrigerate while preparing the filling.

Step 4

In a small saucepan, combine the pitted dates with 2 tablespoons of water. Cook over low heat until the dates are soft and form a paste, stirring occasionally.

Step 5

In a large bowl, toss the sliced apples with lemon juice, ground cinnamon, the date paste, cornstarch, raisins, and optional nuts until well combined.

Step 6

Reserve one-third of the dough for the lattice top. Roll out the remaining dough on a floured surface to fit the bottom and sides of your prepared springform pan.

Step 7

Press the dough into the pan and up the sides to create a crust. Fill with the apple mixture, spreading evenly.

Step 8

Roll out the reserved dough and cut into strips. Arrange the strips in a lattice pattern over the apples.

Step 9

Beat the remaining egg and brush the lattice top with it for a golden finish.

Step 10

Bake in the preheated oven for 60 minutes until the crust is golden brown and the filling is bubbly.

Step 11

Allow to cool for at least 15 minutes before removing the springform and serving warm or at room temperature.
