Ingredients

  • 2 cups Almond flour
  • 0.5 cup Unsweetened cocoa powder
  • 0.75 cup Erythritol or preferred sugar-free sweetener
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 cup Unsalted butter, melted
  • 1 Large egg
  • 1 teaspoon Vanilla extract
  • 0.75 cup Sugar-free dark chocolate chips

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a medium bowl, combine almond flour, cocoa powder, erythritol, baking powder, and salt. Stir well to ensure the dry ingredients are evenly mixed.

Step 3

In a separate large bowl, whisk together the melted butter, egg, and vanilla extract until fully combined.

Step 4

Gradually add the dry ingredients to the wet ingredients, stirring until a thick dough forms. Make sure to scrape down the sides of the bowl to include all dry ingredients.

Step 5

Fold in the sugar-free dark chocolate chips until they are evenly distributed throughout the dough.

Step 6

Scoop tablespoon-sized portions of the dough onto the prepared baking sheets, spacing them about 2 inches apart to allow room for spreading.

Step 7

Flatten each cookie slightly with the back of a spoon or your fingers.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the edges are set and the cookies are slightly puffy.

Step 9

Remove from the oven and allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Enjoy your sugar-free double chocolate cookies with a cold glass of milk or your favorite hot beverage!
