Step 1

In a heavy-bottomed pot, combine the full-fat milk, heavy cream, and erythritol.

Place the pot over medium heat and stir continuously until the erythritol dissolves completely, approximately 5-7 minutes.

Once dissolved, add the baking soda to the mixture. This will help prevent the milk from curdling.

Reduce the heat to low and allow the mixture to simmer gently. Stir occasionally to prevent it from sticking to the bottom.

Continue to simmer until the mixture thickens and turns a light caramel color. This should take about 60 to 90 minutes. Adjust the heat as necessary to maintain a gentle simmer.
