Ingredients

  • 1 cup Unsweetened coconut milk
  • 8 ounces Unsweetened dark chocolate (70% cocoa or more)
  • 1 tablespoon Cocoa powder
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Stevia or erythritol sweetener
  • 0.5 cup Unsweetened cocoa powder (for coating)
  • 0.25 teaspoon Sea salt

Directions

Step 1

Finely chop the unsweetened dark chocolate and place it in a heatproof bowl.

Step 2

In a small saucepan, heat the unsweetened coconut milk over medium heat until it just starts to simmer. Do not let it boil.

Step 3

Pour the hot coconut milk over the chopped chocolate. Let it sit for about 2-3 minutes to allow the chocolate to melt.

Step 4

Gently stir the mixture with a spatula until the chocolate is completely melted and the mixture is smooth and glossy.

Step 5

Add the vanilla extract, stevia or erythritol sweetener, and sea salt to the chocolate mixture, stirring until combined.

Step 6

Refrigerate the chocolate mixture for about 1-2 hours, or until it is firm enough to scoop.

Step 7

Once the mixture is firm, use a small cookie scoop or spoon to portion out the chocolate and roll into small balls using your hands.

Step 8

Place the cocoa powder in a shallow dish, and gently roll each truffle in the cocoa powder until it is evenly coated.

Step 9

Arrange the finished truffles on a baking sheet lined with parchment paper and refrigerate for an additional 30 minutes to set.

Step 10

Store the truffles in an airtight container in the refrigerator for up to 1 week, allowing them to come to room temperature before serving for the best texture.
