Ingredients

  • 500 ml unsweetened almond milk
  • 100 g erythritol
  • 60 g cornstarch
  • 50 g unsalted butter
  • 1 tsp vanilla extract
  • 4 large egg yolks
  • 2 sheets sugar-free puff pastry sheets
  • 2 tbsp water
  • 1 tsp agar-agar powder

Directions

Step 1

Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper.

Step 2

Place the sugar-free puff pastry sheets on the prepared baking tray. Prick them all over with a fork to prevent puffing up unevenly.

Step 3

Bake the pastry sheets for 10-12 minutes or until golden brown. Remove from oven and allow to cool completely on a wire rack.

Step 4

In a medium saucepan, combine almond milk and erythritol. Heat gently over medium heat until the erythritol dissolves, stirring occasionally.

Step 5

In a separate bowl, whisk together the egg yolks and cornstarch until smooth.

Gradually pour a small amount of the warm almond milk mixture into the egg yolk mixture, whisking constantly, to temper the yolks.

Return the tempered egg yolk mixture to the saucepan with the remaining almond milk mixture. Cook over medium heat, stirring constantly, until the custard thickens to a pudding-like consistency.

Remove the saucepan from heat and stir in the butter and vanilla extract until well combined. Let the custard cool slightly.

Dissolve the agar-agar powder in a small bowl with 2 tablespoons of water and mix completely, then stir the mixture into the slightly cooled custard.

Line the bottom of an 8-inch square baking dish with one sheet of baked pastry. Pour the custard evenly over the pastry, smoothing the surface with a spatula.
