Ingredients

  • 250 grams all-purpose flour
  • 100 grams unsalted butter
  • 60 milliliters cold water
  • 150 grams potato
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon curry powder
  • 0.5 teaspoon garam masala
  • 50 grams peas, frozen
  • 1 medium carrot, small diced
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 egg, beaten (for egg wash)

Directions

Step 1

Begin by preparing the pastry. In a large mixing bowl, add the flour and a pinch of salt. Rub the butter into the flour using your fingertips until the mixture resembles coarse breadcrumbs.

Step 2

Gradually add cold water, a little at a time, and mix until a dough is formed. Wrap the dough in cling film and refrigerate for at least 20 minutes.

Step 3

While the pastry is chilling, peel and dice the potatoes, and boil them in salted water until tender, about 10 minutes. Drain and set aside.

Step 4

Heat vegetable oil in a pan over medium heat. Add the onions and sauté until translucent. Add the garlic and ginger, sauté for another minute until fragrant.

Stir in the diced carrots, cooked potatoes, and peas. Add the curry powder, garam masala, salt, and black pepper. Mix well and cook for another 5 minutes. Adjust seasoning to taste and remove from heat to cool.

Preheat your oven to 200°C (392°F).

Roll out the pastry on a floured surface to about 3mm thickness. Cut circles using a 10cm (4-inch) cutter.

Step 8

Place a tablespoon of the prepared filling onto each circle. Fold the pastry over to enclose the filling and crimp the edges to seal.

Step 9

Place the puffs on a baking sheet lined with parchment paper. Brush the tops with beaten egg.

Step 10

Bake in the preheated oven for 20-25 minutes, or until golden brown and crisp.

Step 11

Remove from the oven and let cool slightly before serving.
