  • 2 whole Bay leaves
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 cup Coconut milk
  • 2 cups Chicken stock
  • 1 pound Potatoes, peeled and cubed
  • 2 large Carrots, sliced
  • 2 tablespoons Lime juice
  • 2 tablespoons Cilantro, chopped

Directions

Step 1

Cut the goat meat into 1-inch cubes and rinse thoroughly with cold water and lime juice. Drain and set aside.

In a large pot, heat the olive oil over medium heat. Add the chopped onions and sauté until they turn translucent, about 5 minutes.

Add the minced garlic, grated ginger, and chopped scotch bonnet peppers. Cook for an additional 2 minutes, stirring frequently.
