  • 1 about 2.5 kg Whole duck
  • 2 tablespoons Sea salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Ground ginger
  • 1 teaspoon Garlic powder
  • 2 whole Star anise
  • 2 sliced Spring onions
  • 2 tablespoons Rice vinegar
  • 3 tablespoons Soy sauce
  • 1 teaspoon Five-spice powder
  • 1 tablespoon Coconut oil

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Remove any giblets from the duck cavity and pat the duck dry with paper towels.

Step 3

Using a sharp paring knife, prick the duck skin all over, being careful not to puncture the meat. This will help the fat render and the skin to become crispy.

Step 4

Mix the sea salt, black pepper, ground cinnamon, ground ginger, and garlic powder in a small bowl.

Step 5

Rub the spice mixture all over the duck, both inside the cavity and on the outside skin.

Place the star anise and sliced spring onions inside the duck cavity.
