Directions

Step 1

In a blender, combine the whole wheat flour, almond milk, eggs, vanilla extract, salt, and melted butter or coconut oil. Blend until the mixture is completely smooth and free of lumps. Allow the batter to rest for 10 minutes while preparing the jam.

Step 2

For the jam, in a small saucepan, combine the pitted dates, berries, water, and lemon juice. Bring the mixture to a boil over medium heat, then reduce to a simmer. Cook for 10-15 minutes or until the berries are soft and the mixture has thickened slightly.
