Ingredients

  • 400 ml coconut milk (full-fat)
  • 100 grams cashew nuts

  • 1 teaspoon cumin seeds
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric powder
  • 0.5 teaspoon cayenne pepper (optional)
  • 1 tablespoon lime juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper, freshly ground
  • 200 ml water
  • 1 tablespoon olive oil

Directions

Step 1

Soak the cashew nuts in hot water for about 10 minutes to soften. Drain and set aside.

In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
