Ingredients

  • 4 cups corn kernels, fresh or frozen
  • 1 medium onion, chopped
  • 1 stalk celery stalk, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 4 cups chicken or vegetable stock
  • 1 cup heavy cream
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

In a large pot over medium heat, melt the butter. Add the chopped onion and celery, and sauté for about 5 minutes until the onions are translucent and the celery is softened.

Step 2

Add the minced garlic and cook for another minute until it is fragrant.

Step 3

Stir in the corn kernels, salt, black pepper, and thyme. Cook for an additional 3 minutes, stirring occasionally.

Step 4

Pour in the chicken or vegetable stock, and bring the mixture to a boil. Reduce heat and simmer for about 15 minutes, allowing the flavors to meld together.

Step 5

Using an immersion blender, puree the soup until smooth. Alternatively, you can carefully transfer the soup in batches to a countertop blender and blend until smooth. Be cautious of the hot liquid.

Step 6

Return the soup to the pot (if using a countertop blender) and stir in the heavy cream. Heat through, but do not allow the soup to boil.

Step 7

Adjust the seasoning to taste, adding more salt or pepper if needed.

Step 8

Ladle the soup into bowls and garnish with freshly chopped parsley before serving.
