Step 1

Begin by preparing your melon. Cut the melon in half and scoop out the seeds. Remove the rind and dice the flesh into small cubes.

Measure out 2 kg of the melon cubes and place them in a large pot.

Add 60 ml of fresh lemon juice to the pot. This will help balance the sweetness and add a bit of acidity.

Pour in 250 ml of water to help the melon cook down evenly.

Using a potato masher or an immersion blender, mash the melon until it's broken down, leaving small chunks as desired for texture.
