Ingredients

  • 2 cups Broccoli florets
  • 1 large Red bell pepper
  • 1 large Yellow bell pepper
  • 2 medium Carrots
  • 1 cup Snow peas
  • 1 small Red onion
  • 3 cloves Garlic
  • 1 tablespoon Fresh ginger
  • 3 tablespoons Soy sauce (low sodium)
  • 1 tablespoon Rice vinegar
  • 1 tablespoon Sesame oil
  • 2 tablespoons Olive oil
  • 1 tablespoon Toasted sesame seeds
  • 2 stalks Green onions

Directions

Step 1

Begin by preparing the vegetables. Cut the red and yellow bell peppers into strips. Slice the carrots into thin matchsticks. Cut the red onion into thin wedges. Mince the garlic cloves and grate the fresh ginger.

Step 2

In a large wok or frying pan, heat the olive oil over medium-high heat.

Add the minced garlic and grated ginger to the pan, stirring frequently for about 30 seconds until fragrant.

Add the red onion wedges to the pan and cook for about 2 minutes or until they start to soften.
