Ingredients

  • 15 oz Canned black beans
  • 15 oz Canned kidney beans
  • 15 oz Canned garbanzo beans (chickpeas)
  • 1 cup Fresh green beans
  • 1 medium Red bell pepper
  • 1 medium Yellow bell pepper
  • 1 cup Cherry tomatoes
  • 1 small Red onion
  • 0.5 cup Cilantro leaves
  • 0.25 cup Lime juice
  • 2 tablespoons Olive oil
  • 1 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Start by draining and rinsing the canned black beans, kidney beans, and garbanzo beans thoroughly in a colander under cold water. Set aside to drain.

Step 2

Trim the ends of the fresh green beans and cut them into 1-inch pieces. Bring a small pot of water to boil and blanch the green beans for 2-3 minutes until they are crisp-tender. Immediately transfer them to a bowl of ice water to stop cooking. Drain and set aside.

Step 3

Dice the red and yellow bell peppers into small cubes. Halve the cherry tomatoes and finely dice the red onion. Chop the cilantro leaves.

Step 4

In a large mixing bowl, combine the black beans, kidney beans, garbanzo beans, green beans, chopped bell peppers, cherry tomatoes, diced red onion, and cilantro.

Step 5

In a small bowl, whisk together lime juice, olive oil, ground cumin, salt, and black pepper to create a dressing.

Step 6

Pour the dressing over the bean mixture and toss gently until all the ingredients are evenly coated.

Step 7

Allow the bean medley to rest for at least 15 minutes before serving to let the flavors meld. For best results, refrigerate for 1 hour before serving.

Step 8

Serve chilled or at room temperature as a delightful side dish or a light, refreshing meal.
