In a small bowl, combine the gelatin powder and 50 ml of coconut water. Stir gently and let it sit to bloom for about 5 minutes.
In a medium saucepan, combine the remaining coconut water and coconut milk. Add in the stevia or monk fruit sweetener, vanilla extract, and a pinch of salt.
Heat the saucepan over medium heat, stirring occasionally until the mixture is warm but not boiling.
Add the bloomed gelatin into the coconut mixture. Stir continuously until the gelatin is completely dissolved.
Once the gelatin is dissolved, remove the saucepan from the heat.
