Ingredients

  • 800 ml Coconut milk
  • 200 ml Unsweetened coconut cream
  • 80 g Erythritol or monk fruit sweetener
  • 2 tsp Vanilla extract
  • 0.25 tsp Sea salt
  • 0.5 tsp Xanthan gum

Directions

Step 1

In a medium saucepan over medium heat, combine the coconut milk and coconut cream. Stir occasionally until the mixture is well combined and heated through but not boiling.

Add the erythritol or monk fruit sweetener and sea salt to the warm coconut mixture. Stir continuously until the sweetener and salt have completely dissolved.

Remove the saucepan from heat. Stir in the vanilla extract.
