  • 1 cup Unsweetened shredded coconut
  • 12 pieces Medjool dates, pitted
  • 2 tablespoons Coconut oil
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Sea salt
  • 2 tablespoons Chia seeds

Directions

Step 1

Begin by preparing your food processor. Place the almonds into the processor and pulse until they are finely chopped. Be careful not to turn them into almond butter.

Step 2

Add the shredded coconut, pitted Medjool dates, coconut oil, vanilla extract, ground cinnamon, sea salt, and chia seeds to the processor with the chopped almonds.

Step 3

Process the mixture until it starts to clump together and is well combined. This will take about 2-3 minutes. You may need to stop and scrape down the sides of the processor bowl a few times to ensure everything is properly mixed.

Step 4

Once the mixture is ready and holds together when pressed, it's time to form the balls. Use a tablespoon or a small cookie scoop to portion out the mixture.
