Ingredients

  • 0.5 cup Olive oil
  • 0.25 cup Apple cider vinegar
  • 2 tablespoons Tomato paste
  • 0.25 cup Water
  • 2 teaspoons Onion powder
  • 1 teaspoon Garlic powder
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 0.5 teaspoon Stevia or monk fruit sweetener (to taste)

Directions

Step 1

In a medium-sized mixing bowl, combine the olive oil and apple cider vinegar. Whisk together until well blended.

Step 2

Add the tomato paste and water to the oil and vinegar mixture, and whisk until smooth and the tomato paste is fully incorporated.

Step 3

Stir in the onion powder, garlic powder, Dijon mustard, salt, black pepper, and paprika until everything is well combined.

Step 4

Taste the dressing and add stevia or monk fruit sweetener to your liking, starting with 1/2 teaspoon, and adding more if desired. Mix well.

Step 5

Transfer the dressing to a glass jar with a tight-fitting lid. Shake it vigorously to ensure all ingredients are fully emulsified.

Step 6

Refrigerate the dressing for at least an hour before serving to allow the flavors to meld together.

Step 7

Give the dressing a good shake before using. Serve as a dressing for salad or as a topping for sandwiches and wraps.

Step 8

Store in the refrigerator for up to one week.
