Ingredients

  • 2 cups unsweetened almond milk
  • 0.25 cup xylitol (or preferred sugar substitute)
  • 3 large egg yolks
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter
  • 0.125 teaspoon salt

Directions

Step 1

In a medium saucepan, combine the unsweetened almond milk and xylitol. Heat over medium heat until the mixture begins to simmer, stirring occasionally to dissolve the xylitol.

Step 2

In a separate bowl, whisk together the egg yolks and cornstarch until smooth and pale.

Step 3

Once the almond milk mixture is simmering, slowly temper the egg yolk mixture by adding a ladleful of the hot milk mixture to it while whisking constantly. This prevents the eggs from curdling.

Step 4

Gradually pour the tempered egg mixture back into the saucepan with the remaining hot almond milk, whisking constantly.

Step 5

Continue to cook the mixture over medium heat, stirring constantly, until it thickens and coats the back of a spoon, around 5-7 minutes.

Remove the saucepan from the heat and stir in the vanilla extract, unsalted butter, and salt, mixing until the butter is fully melted and incorporated.

Step 7

Transfer the vanilla sauce to a bowl, cover with plastic wrap directly on the surface to prevent a skin from forming, and allow it to cool. Serve warm or chilled as desired.
