Ingredients

  • 2 cups Whole milk
  • 1 Vanilla bean
  • 4 large Egg yolks
  • 0.333 cup Sugar substitute (like erythritol or stevia blend)
  • 2 tablespoons Cornstarch
  • 0.25 teaspoon Salt

Directions

Step 1

In a medium saucepan, pour the whole milk.

Step 2

Split the vanilla bean lengthwise with a sharp knife and scrape the seeds out. Add both the seeds and the pod to the milk.

Heat the milk over medium heat until it just begins to steam. Do not let it boil. Remove from heat and let it infuse for 10 minutes.

While the milk is infusing, in a mixing bowl, whisk together egg yolks, sugar substitute, cornstarch, and salt until the mixture is smooth and well combined.

Remove the vanilla pod from the milk.

Gradually add the hot milk to the egg mixture, whisking constantly to prevent the eggs from curdling.

Return the mixture to the saucepan and cook over low heat, stirring constantly with a wooden spoon, until the custard thickens and coats the back of the spoon. This should take about 10-12 minutes.
