Ingredients

  • 1 cup Heavy cream

Directions

Step 1

Brew the coffee and allow it to cool to room temperature. If using, add the brandy or rum to the coffee and set it aside.

In a large bowl, beat the heavy cream until it forms stiff peaks. Set aside in the refrigerator.

In a separate heatproof bowl, whisk together the egg yolks, granulated erythritol, and salt. Place the bowl over a pot of simmering water (double boiler) and continuously whisk for about 5 minutes until the mixture becomes pale and slightly thickened.
