Ingredients

  • 1 cup unsweetened almond milk
  • 2.25 teaspoons active dry yeast
  • 0.33 cup Erythritol sweetener
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 3 cups all-purpose flour
  • 0.5 teaspoon salt
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon ground cinnamon
  • 0 cooking spray

Directions

Step 1

Warm the almond milk in a small saucepan over low heat until just warm to the touch, about 110°F (43°C). Do not overheat.

Step 2

Pour the warm almond milk into a large mixing bowl and sprinkle the yeast on top. Let it sit for 5 minutes until the yeast is frothy.

Step 3

Add the erythritol, melted butter, vanilla extract, and egg to the yeast mixture, stirring until well combined.

Step 4

In a separate bowl, whisk together the all-purpose flour, salt, baking powder, and ground cinnamon.

Step 5

Gradually add the dry ingredients to the wet ingredients, stirring with a wooden spoon until a dough forms. The dough should be slightly sticky.

Step 6

Transfer the dough to a lightly floured surface and knead for about 5 minutes until smooth and elastic.

Step 7

Place the dough in a lightly greased bowl and cover it with a clean kitchen towel. Allow it to rise in a warm place for about 1 hour or until it has doubled in size.

Step 8

Preheat your oven to 375°F (190°C).

Step 9

Once the dough has risen, punch it down and roll it out to about 1/2 inch thickness on a floured surface.

Step 10

Use a doughnut cutter to cut out doughnuts and transfer them to a baking sheet lined with parchment paper.

Step 11

Lightly coat the doughnuts with cooking spray.

Step 12

Bake the doughnuts in the preheated oven for 10 to 12 minutes or until they are golden brown.

Step 13

Remove the doughnuts from the oven and allow them to rest for a few minutes before serving.

Step 14

For an optional finishing touch, brush them with a little more melted butter and sprinkle with additional erythritol and cinnamon mixture.
