  • 3 tablespoons extra-virgin olive oil

  • 15 fresh basil leaves

  • 0.5 teaspoon black pepper
  • 0.5 cup water

Directions

Step 1

Begin by preparing the tomatoes. Bring a large pot of water to a boil. Score a small 'X' on the bottom of each tomato, then blanch them in the boiling water for about 30 seconds until the skin starts to peel back.

Remove the tomatoes with a slotted spoon and transfer immediately to a bowl of ice water. Once cool, peel off the skins and remove the cores. Roughly chop the tomatoes and set them aside.
