  • 150 grams Almond flour
  • 100 grams Whole wheat flour
  • 100 grams Unsalted butter, cold and cubed
  • 0.5 teaspoon Salt
  • 2 tablespoons Cold water
  • 4 pieces Ripe pears, peeled, cored and thinly sliced
  • 2 tablespoons Fresh lemon juice
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Cornstarch
  • 2 tablespoons Granular erythritol-based sweetener
  • 3 tablespoons Sliced almonds

Directions

Step 1

Preheat the oven to 180°C (350°F). Grease a tart pan with removable bottom (approximately 9 inches in diameter).

Step 2

In a medium bowl, combine almond flour, whole wheat flour, and salt. Add the cold cubed butter and use your fingertips or a pastry cutter to blend until the mixture resembles coarse crumbs.

Step 3

Add cold water, a tablespoon at a time, and mix until the dough comes together. Press the dough evenly into the bottom and up the sides of the prepared tart pan. Prick the base with a fork to prevent puffing.
