  • 1 cup granulated erythritol
  • 0.5 cup water
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup roasted unsalted peanuts

Directions

Step 1

Prepare a baking sheet by lining it with parchment paper or a silicone baking mat.

In a medium saucepan, combine the granulated erythritol and water. Stir to dissolve the erythritol completely.

Place the saucepan over medium-high heat and bring the mixture to a boil without stirring.

Using a candy thermometer, cook the mixture until it reaches the hard crack stage, around 300°F (149°C). Be very attentive as the temperature can rise quickly past this point.
