Directions

Step 1

Preheat your oven to 150°C (300°F). Line a baking sheet with parchment paper and draw an 8-inch circle as a guide.

In a clean, dry mixing bowl, beat the egg whites with an electric mixer on medium speed until soft peaks form.

Gradually add the xylitol or erythritol, one tablespoon at a time, beating well after each addition. This will ensure the meringue is stiff and glossy.
