Ingredients

  • 2 cups Rolled oats
  • 1 cup Whole wheat flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 0.75 cup Unsweetened applesauce
  • 2 medium Ripe bananas
  • 1 teaspoon Vanilla extract
  • 0.5 cup Chopped nuts (optional)
  • 0.5 cup Raisins or chopped dried fruit (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, combine the rolled oats, whole wheat flour, baking soda, ground cinnamon, and salt. Mix well.

Step 3

In another bowl, mash the ripe bananas until smooth. Add the unsweetened applesauce and vanilla extract to the mashed bananas and mix until combined.

Step 4

Pour the wet ingredients into the dry ingredients and stir until everything is evenly mixed. If using, fold in the chopped nuts and raisins or dried fruit.

Step 5

Use a tablespoon to scoop the dough onto the prepared baking sheet, forming small mounds. Flatten each mound slightly with the back of the spoon.

Step 6

Bake in the preheated oven for 10-12 minutes or until the edges begin to turn golden brown.

Step 7

Remove the cookies from the oven and allow them to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Step 8

Enjoy your sugar-free oat cookies as a healthy snack or dessert!
