Ingredients

  • 3 cups All-purpose flour
  • 1 packet (2 1/4 teaspoons) Active dry yeast
  • 0.75 cup Warm milk
  • 0.25 cup Erythritol or sugar substitute
  • 0.25 cup Butter, melted
  • 1 large Egg
  • 0.5 teaspoon Salt
  • 1 teaspoon Vanilla extract
  • 0.5 cup Sugar-free jelly
  • 4 cups Vegetable oil for frying
  • 2 tablespoons Powdered erythritol (optional, for dusting)

Directions

Step 1

In a small bowl, combine warm milk and yeast. Let it sit for about 5 minutes, until it becomes frothy.

Step 2

In a large mixing bowl, add the all-purpose flour, erythritol, and salt. Mix to combine the dry ingredients.

Step 3

Create a well in the center of the flour mixture, and add the frothy yeast mixture, melted butter, egg, and vanilla extract.

Step 4

Mix until the ingredients come together to form a soft dough. Transfer the dough to a lightly floured surface and knead for about 5-7 minutes, until smooth and elastic.

Step 5

Place the kneaded dough in a lightly oiled bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour, or until it doubles in size.

Step 6

Punch down the risen dough and roll it out to about 1/2 inch thickness. Use a round cutter approximately 3 inches in diameter to cut out donut circles.

Step 7

Place the dough circles on a lightly floured baking sheet. Cover with a cloth and let them rise again for about 30 minutes.

Step 8

In a deep pot, heat the vegetable oil to 350°F (175°C). Fry the risen donuts in batches, 1-2 minutes per side, until they are golden brown.

Step 9

Using a slotted spoon, remove the donuts from the oil and let them drain on a paper towel-lined plate.

Step 10

Using a pastry bag fitted with a small tip or a small spoon, fill each donut with about 2 teaspoons of sugar-free jelly.

Step 11

If desired, dust the donuts with powdered erythritol for an extra touch of sweetness.

Step 12

Serve warm and enjoy!
