  • 4 cups Milk
  • 4 pieces Cardamom pods

  • 2 tablespoons Slivered almonds
  • 2 tablespoons Cashew nuts
  • 2 tablespoons Raisins
  • 2 tablespoons Chopped pistachios
  • 2 tablespoons Stevia or Erythritol
  • 0.5 teaspoon Rose water

Directions

Step 1

Rinse the basmati rice under cold water until the water runs clear. Drain the rice and set aside.

Step 2

In a heavy-bottomed pan, bring the milk to a boil over medium heat, stirring occasionally to prevent the milk from scorching.

Step 3

Once the milk starts boiling, lower the heat and add the rinsed rice. Stir well.

Gently crush the cardamom pods with the back of a spoon to release their flavor, then add them to the milk and rice mixture.

Allow the kheer to simmer on low heat, stirring frequently, until the rice is cooked completely and the milk has reduced to approximately 1/3 of its original volume. This should take around 30 to 35 minutes.
