Ingredients

  • 250 g Whole wheat flour
  • 2 tsp Ground ginger
  • 1 tsp Ground cinnamon
  • 1 tsp Baking powder
  • 0.5 tsp Baking soda
  • 0.25 tsp Salt
  • 60 ml Unsweetened applesauce
  • 60 ml Coconut oil, melted
  • 200 g Pitted dates
  • 120 ml Hot water
  • 1 tsp Vanilla extract

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

Step 2

In a small bowl, soak the pitted dates in hot water for 10 minutes to soften them.

Step 3

In a large mixing bowl, sift together the whole wheat flour, ground ginger, ground cinnamon, baking powder, baking soda, and salt.

Step 4

Once the dates have softened, drain them and puree in a food processor or blender until smooth.

Step 5

In a medium bowl, mix together the date puree, unsweetened applesauce, melted coconut oil, and vanilla extract until well combined.

Step 6

Gradually add the wet ingredients to the dry ingredients, mixing thoroughly to form a dough.
