Ingredients

  • 6 medium ripe tomatoes
  • 1 large English cucumber
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 1 small red onion
  • 2 large garlic cloves
  • 0.25 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup cold water
  • 0.25 cup fresh basil
  • 1 tablespoon lemon juice

Directions

Step 1

Wash all vegetables thoroughly under cold water.

Step 2

Core and chop the tomatoes into quarters.

Step 3

Peel and dice the cucumber.

Step 4

Remove seeds and chop the red and green bell peppers into chunks.

Step 5

Peel the red onion and cut it into smaller pieces.

Step 6

Peel the garlic cloves.

In a blender or food processor, combine tomatoes, cucumber, red bell pepper, green bell pepper, red onion, and garlic. Blend until smooth.
